Hi empowered and sweaty friends! Let’s talk about snacks because 1) snacks (enough said, am i right?) and 2) I’m snacking on a new recipe and it’s literally AMAZE-balls!
If you attended or tuned into Fit Approach’s first ever fitcation, the EMPOWER Retreat in beautiful Sonoma, CA, then you might have heard about or even tasted the delicious energy bites we prepared for all of our attendees. These snacks fueled our sweaty adventure and now they are my go-to way to fuel up before/after a run or yoga class, as a mid-day snack, a smoothie topper, or any other excuse I can find to eat a snack.
As we gear up for our running and and yoga adventure in SF, it seems fitting that we talk about snacks. If you’re anything like me, then you like to plan your snack situations ahead of time so when you find yourself starving at your next pit stop or mid-flight, you have something healthy and energizing to keep you feeling (em)powered to continue your happy (not hangry) journey. Once you arrive at your destination, it’s also great to have healthy and filling snacks on hand as you run, walk, flow, or even handstand from point A to point B. Moral of the story: bring snacks, don’t let the hanger get you, and have fun!

Now that we can agree on the importance of good snacks, let’s get down to the reason we’re here: an amaze-balls snack recipe. You may also know that we LOVE everything that Amazing Grass does from their bars to their superfood protein powders and everything in between (If you want to understand our love then look at this, this, and this). This is the plant-based protein that we’ve all been waiting for, delicious, filled with whole foods and packed with a plenty of vitamins and minerals - and we even took it up a notch by creating an easy-to-make protein ball recipe so you can bring a carb and protein snack with you where you go.
Almond + Blueberry AMAZE-Balls with Amazing Grass Superfood Protein
2 scoops of Amazing Grass Vanilla Superfood Protein Powder
2 cups of rolled oats
1 cup of almond butter
1 cup of dried blueberries
1 tspn vanilla extract
3 tablespoons honey (or maple syrup)
Almond milk to add more moisture to the mix and soften the oats
In a large mixing bowl, mix Amazing Grass Vanilla Superfood Protein Powder and oats. For a finer texture, place oats into a blender and use the pulse setting to break up the oats.
Add in the almond butter, honey (or maple syrup), and vanilla and mix with a spoon (or your hands if you don’t mind getting all kinds of messy).
Add in the blueberries and continue to mix.
Pour almond milk into the mixture, 1 tablespoon at a time. This will moisten the mixture and help with the binding when you roll into balls.
Taste the batter to make sure it’s sweetened to your liking – you can always add more almond butter and honey/maple syrup.
Once all the ingredients are combined, take a spoon and scoop two tablespoons worth of mixture and use your hands to roll it into a ball. Place balls on a plate lined with parchment or wax paper.
Once all the balls are made, place them in tupperware and put them straight into the fridge. You can eat them right away, but I like to let the flavors develop overnight.
These will last up to 7 days in the fridge and for a long time in the freezer.

Now that I’ve talked your ears off with my love for snacks, you’re probably pretty hungry… Instead of grabbing for that bag of chips, make this recipe in 15 minutes and taste-test as you go. If you’re not digging my ingredient combination, feel free to change it up. We recently made these balls with espresso, peanut butter and chocolate, and OH MY BALLS, they are delicious.
